Quinoa Fried Custard Cakes

You might wonder why we have such a strange-sounding recipe on a page of quinoa recipes for kids.

Well -- simply -- because our kids loved these cakes! You’ll see at the end of the video above that our youngest son was very disappointed when they were gone.

So, here are the ingredients...

Quinoa Fried Custard Cakes Ingredients

  • 1 Cup cooked quinoa, packed into a measuring cup
  • 1 egg
  • ⅓ Cup almond milk
  • 1 Tbsp oil
  • 1 tbp vanilla
  • 3 scoops stevia
  • 1 tsp baking powder
  • ⅛ tsp salt

Quinoa Fried Custard Cakes Instructions

  1. Put the quinoa, egg, oil, vanilla, stevia, and salt into a food processor, mix, and transfer to a bowl.
  2. Add the almond milk and baking powder and stir.
  3. Scoop small pancake-sized amounts onto a pan or griddle and cook on medium-low until brown.

This recipe fed Lori and the two boys. Though you can see that our youngest didn’t think it was enough. So you might want to make a double batch!

These custard cakes took about 30 minutes to make.



Tuna Quinoa Burgers

We could have put this recipe several places on our site. It’s made with quinoa flakes, so we could have included it on our quinoa flakes recipes page.

But our kids loved these burgers so much we decided to put the recipe on this page.

We know your kids will love them as much as ours did!

Here are the ingredients...

Tuna Quinoa Burgers Ingredients

  • 1 five-ounce can tuna, flaked
  • 1 egg, slightly beaten
  • ½ lemon, juiced
  • ½ tsp summer savory or dill
  • ⅓ Cup quinoa flakes
  • 3 shakes black pepper
  • ⅓ Cup onion, chopped
  • ½ tsp salt

Tuna Quinoa Burgers Instructions

  1. Mix thoroughly.
  2. Let sit 3 minutes.
  3. Form into 4-5 patties.
  4. Fry in oil at medium heat.
  5. Flip after five minutes.
  6. Remove from pan and serve.

Tuna Quinoa Burgers Yield

As you can see in our video, this recipe made 4 medium-sized burgers. Double the recipe to feed a larger -- or hungrier -- crowd.

All in all I’d say we spent 20-30 minutes on this recipe.
