Our kids love these quinoa pancakes.

There was a time when our oldest boy wanted only this recipe for supper! And with good reason…

As a family we don’t eat baked goods very often. So anything like this is quite a treat in our household.

But this recipe is gluten-free and packs all the nutrition of quinoa. So we give-in from time-to-time and make these.

Our experience with gluten-free and quinoa pancakes

As you may know our family tries to eat gluten-free. We just feel better generally without gluten.

And if you’re trying to be gluten-free yourself you know how hard it can be to find food that you actually like and can also eat.

We’d tried different gluten-free pancake mixes before. What did we experience?

Well, it seems like either the mix would stick to the pan. Or sometimes the mix would be too hard to flip. We almost despaired of ever eating pancakes again... That is, until we developed this recipe!

We’re really happy with it and hope it’s helpful to you as well.

So without further ado, on to the recipe!

Quinoa pancakes ingredients

Here’s what you need in order to make this recipe...

  • 1 Cup Quinoa flour

  • 1 tsp Baking powder

  • 1 tsp Baking soda

  • 1 Tbs Chia seeds, ground

  • Dash of salt

  • ½ Cup Quinoa, cooked

  • ½ Cup Zucchini, grated

  • 2 Tbs Oil

  • ½ Cup Water or coconut milk (If using coconut milk, use 1 Tbs oil instead of 2)

  • Additional water (½ Cup to ¾ Cup)

Let me note a few things with these ingredients…

We used Chia seeds. But you could probably substitute ground flax seeds if you’d prefer. Whatever you use just make sure that it sticks together with the gluten-free flour.

You can also substitute carrots for the zucchini.

And finally we use grapeseed oil. It becomes less acidic when exposed to high heat.

Now let’s see what to do with these ingredients...



How to make quinoa pancakes

Here’s the process...

  1. Mix dry ingredients.

  2. Add Quinoa, Zucchini, Oil, ½ Cup Water or coconut milk.

  3. Stir a little to find out consistency.

  4. Add the additional water a little at a time while stirring. (Batter shouldn't be too watery.)

  5. Heat pan with oil on a little lower than Medium setting. (It's a 4 on our stove.)

  6. Add batter using the ¼ Cup measuring cup. I can fit 4 on the pan.

  7. When bubbles appear and stay flip it over. Just look for some of the bubbles to pop and give the pancake little “craters.”

  8. Take them off when they're as brown as you like 'em. (FWIW, Lori’s dad likes them burnt!)

So there it is -- you really can have your cakes and eat ‘em too!
