Now, we've tried gluten-free flour mixes -- usually with lackluster results. The mix would sometimes stick to the bowl. Other times it would be too heavy or goopy to flip on the griddle.

That's why we're really excited about this recipe. It worked really well with minimal mess.

And the ingredients are simple. Quinoa flour, baking powder, baking soda, chia seeds, salt, quinoa, zuchini, oil, coconut milk, and water. No xanthan or guar gum -- who wants gum in their pancakes, anyway?? -- or any other strange ingredient!

The ingredients are very simple. And simple is good -- Coconut milk, water, stevia, cinnamon, quinoa, and the optional apple, carrot, or some walnuts.

All-in-all this recipe probably takes about 30 minutes to make. It smells delicious and tastes just as great.

Quinoa porridge -- Simple yet elegant.

This is one of our easiest recipes, really. Here are the ingredients -- quinoa and... water. That's it. Think you could handle that? I think so!

The steps to make it are just as simple. Basically, boil and simmer. Couldn't be easier!

Of course you can add whatever you'd like as toppings. Grated carrots, stevia, cinnamon, and chilled cocnut milk are all favorites in our house.
